Risotto is my favourite comfort food. If you’ve never cooked risotto before, then this is the perfect recipe to start with. I used Mozzarella, Gruyère and Parmesan cheese; which really are my favourite cooking cheeses. If you like blue cheese or other strong cheeses, I recommend that you crumble them on top instead of adding them into the risotto as it can be a bit overwhelming. My favourite risotto is definitely saffron. I love how fragrant it is and specially how well it compliments seafood. On the other had, I also love swordfish; I think it has a very nice firmness to it and a very particular taste. If you haven’t had it before, this is an amazing combo to try it. This amazing risotto is creamy and fresh at the same time! If you love risotto this is one for you. It’s really easy to cook and your family and friends will love you for it. Eat with a glass of wine on the side ;). It’s ideal to do your own chicken stock, but if you’re in a hurry you can skip that and use vegetable cube instead and it will work as good.
