This honeycomb is a nice sweet I learned to eat in London. It’s caramel but you add bicarbonate of soda and it reacts creating lots of bubbles. It’s amazing because then we get all the flavour from the caramel without breaking your teeth. Great to top ice-creams, to cover with chocolate, to put on cakes. There’s nothing like home-made gnocchi. If we make them carefully, we can make them super light and delicate instead of really heavy and dense. The part where you need to pay most attention is when choosing and cooking your potatoes. The idea is that they are as dry as possible so that we don’t have to add more flour than is absolutely necessary and so making it less heavy. You’ll love pan-fried gnocchi (if you don’t already) because even though they are still nice and soft inside, on the outside they go nice and crunchy which is really nice. I love chicken wings. Grilled, pan-fried, oven baked. What’s yummy about them is that you can eat them with your hands yet it’s still be socially acceptable. They always hace a nice sauce with them and this time it’s no exception. I marinated them in several spices that make them so yummy. That part is really easy. It gets complicated if you want to make your wings one-biters by just one pull of the teeth like I did; there’s some butchery to be made. However, if this is too complicated for you, you can always just cook them whole, and they’ll be as yummy. With what was left of the wings I made chicken stock 🙂 I’ll leave the recipe also.

Bread… what an amazing invention. That smell of bread that just came out the oven is completely irresistible. Given that right now I’m in Dublin, I thought it was apropiate to share this recipe with you. It’s soooo easy! It doesn’t even need yeast; it’s actually called soda bread because it uses bicarbonate of soda and baking powder. It’s more compact than a yeasted bread but it’s completely exquisite. I love to toast it and put some butter on it… YUM! As always, it’s my version of the recipe with some changes I like in my baked goods, like the parmesan cheese. To tell you the truth, the only reason why I mark this as a 2/5 difficulty is because of the poached egg, that can be tricky at first. Other than that, it’s super easy and an ideal recipe for you to experiment on and vary as many things as you like, so you use whatever you have in the fridge. The veggies go into the oven with olive oil that we first infuse with rosemary, saffron and garlic, then it’s just a matter of cooking them in the oven. Just buy a pretty smoked salmon and practice that poached egg so you can use it for many other things. And if you’re too scared of poaching the egg, you can cook a hard-boiled egg or have it cooked midway. Finally, I’m going to teach you how to toast quinoa! What? Toast quinoa? Yes! I’ve been living in England for more than a year now and one of the things I love the most is its tea times. I think the idea of eating small pies, pastries, sandwiches and … SCONES in the middle of the afternoon is a brilliant idea. And all this accompanied by a lovely tea. So yeah, I had to do a scone recipe, and this one takes only 30min. I’ve eaten a whole bunch and this one is really nice because even if it’s crumbly (as it should) it’s not dry but nicely moist in the middle, which I achieved on the second try of the recipe after some tweaks. I looooove mushrooms! I like them with pasta, in sadwiches, with eggs, pan fried, baked, stuffed… I could continue! But I specially love cream of mushrooms. This time I used white button, shitake and portobello. What’s nice about this mix is that the first are really mild and the others have a much more concentrated flavour.
