Avocado is one of my favourite ingredients. Not only is it soft and creamy, but it also has an incredible flavour that lets itself be combined with others. In this case, I breaded them with panko (a super crunchy japanese breadcrumb) and cooked them in the oven. You can also fry them ;). As a dip I made a homemade honey mustard (takes literally 2min) and you can use it not only as a dip but also as a dressing, for sandwiches and wraps. Red velvet is one of my favourite flavours. It has a bit of cocoa powder and vinegar that really gives it a special touch. The trend with this flavours started with cakes with cream cheese buttercream layers, and then it strongly went over to cupcakes. Nowadays you can find this flavour in pancakes, loaves and even waffles. Risotto is my favourite comfort food. If you’ve never cooked risotto before, then this is the perfect recipe to start with. I used Mozzarella, Gruyère and Parmesan cheese; which really are my favourite cooking cheeses. If you like blue cheese or other strong cheeses, I recommend that you crumble them on top instead of adding them into the risotto as it can be a bit overwhelming. On top of this risotto I put crispy leeks, which are not only really easy to make, but they are also really tasty. I like to put it on my salads and fish also. We all need a chocolate hug every once in a while, and I think this is really the ultimate comfort dessert. I’ve made it for birthday parties, family meetings and several other gatherings, and every single time I get a “can I have another piece” reaction. The slightly salty crust mixed with the fudgy brownie and the nutella filling makes for an incredible flavour. The only thing that takes a bit of time is the crust, but believe me it’s worth it because it’s super buttery and crunchy. If you’re in a hurry though, you can buy a pre-made one. I love this recipe because the acidity from the white wine with the olives, capers and cherry tomatoes does wonders to a piece of perfectly pan-fried salmon. You can even use this with other fish you have at hand and it would still be great. On the side, I did some baked potatoes which are super easy and you can use with other dishes you like.

This dessert is easy and delicious, perfect for Valentine’s or Galentine’s day. A pavlova is a cooked meringue with cream and fruit. In this case I made a chocolate cream to make it more interesting. You can make the meringues ahead of time and keep them at room temperature in a sealed container so they don’t go soggy. You can leave the cream mixed with all the ingredients in the fridge so it’s nice and cold when you use it, and whip it right before serving.
