Asian flavours salmon tartare

This is definitely one of this dishes that you would order in a restaurant and say to yourself “I would never be able to do this”, but actually it’s extremely easy to do. I love the sauce for this one, it’s tasty to an extreme and makes the softness of the salmon come through. The avocado, as it’s fatty like the salmon, makes the mouthful very pleasurable, and the slightly sour sauce with the spring onions and shallots makes it a perfect dish :). It’s very fresh and should be serves really cold with some nice toasts.

Portions: 6

Ingredients:
– 600g salmon
– 2 garlic cloves
– 20g ginger
– 30ml sesame oil
– juice from 1 lime
– 50ml soy sauce
– 200g avocado
– 25g toasted sesame seeds
– 15g spring onion (green part)
– 20g shallots
– 1 baguette

Procedure:
1. We’ll start with the toast so that they have time to cool down, we don’t want hot toasts with our cool and fresh tartar! Cut thin slices of the baguette and put them in the oven at 140C for 15min or until really dry. Right now we’re not looking for colour, but if you wish you can make them golden brown at a higher temperature 🙂IMG_07242. We’re going to give the sesame oil a nice aroma, so cut the ginger and crush the garlic and put them on the stove on very low until it starts to bubble, then turn it off and leave it too cool down to room temperature with the ginger and garlic inside.
IMG_07273. The easiest way to remove the skin of the salmon (for a tartar, where you don’t need the filet to be whole) is to go down the middle line that’s naturally marked and then turn to one side. The skin is so tough that it helps guide your knife.
IMG_0729IMG_0730IMG_07324. Remove the brown meat from the salmon, as it’s very strong and not nice.
IMG_07335. Cut the filet into nice cubes, Don’t make them too small as the texture of the oily salmon will get lost into the rest of the ingredients.
IMG_07346. Cut the spring onions as fine as you can in those little rings that look really good. Then cut the shallots really small as well. Mix them with the sesame seeds and out amazingly-smelling sesame oil.

7. Add the soy sauce, lemon juice, avocado in cubes and salmon, and that’s it! For me no salt is needed because of the soy sauce, but taste it and you be the judge of your dish 🙂

That’s it! Serve with you baguette toasts and YUM!!! Enjoy them.
